Coconut Curry Chicken with Cauliflower and Chickpeas

Sweet, buttery coconut curry warms the belly, and crunchy cauliflower, chewy chickpeas, and juicy chicken breast tenders mingle with exotic spices in this easy, India-inspired dish.

Ingredients

  • 1/2 lb. chicken breast tenders
  • 2 cups cauliflower florets
  • 1/2 cup chickpeas
  • 3/4 tsp. salt*
  • 1 tsp. olive oil*
  • 1 1/2 tbsp. curry powder
  • 1 cup coconut milk
  • *Common pantry item.

Instructions

  1. Heat olive oil in a medium sauté pan over medium high heat.
  2. Add chicken breast and season with salt and pepper.
  3. Cook for 3 minutes, turn chicken half way through. Remove chicken from pan.
  4. Add in remaining ingredients. Cover and cook for 3 minutes.
  5. Return chicken to pan and cook for an additional 1-2 minutes until chicken is cooked through.
