Ingredients
- 1/2 lb. chicken breast tenders
- 2 cups cauliflower florets
- 1/2 cup chickpeas
- 3/4 tsp. salt*
- 1 tsp. olive oil*
- 1 1/2 tbsp. curry powder
- 1 cup coconut milk
- *Common pantry item.
Instructions
- Heat olive oil in a medium sauté pan over medium high heat.
- Add chicken breast and season with salt and pepper.
- Cook for 3 minutes, turn chicken half way through. Remove chicken from pan.
- Add in remaining ingredients. Cover and cook for 3 minutes.
- Return chicken to pan and cook for an additional 1-2 minutes until chicken is cooked through.
