Corn: Nutrition

Corn is so versatile, it’s been transformed into everything you can imagine – from sweeteners to plastic utensils to biofuel – but for most of us, corn is food and a great one at that!

Interestingly enough, corn is a whole grain (when dried) in things like polenta and even popcorn, bringing all that whole grain goodness with it. But when you eat it fresh off the cob, corn is considered a vegetable, making it a tasty option for your five-a-day.

When it’s fresh, look for healthy-looking and plump kernels under tightly wrapped husks, then keep it stored in your fridge until ready to use. If you’re concerned about GMOs, look for non-GMO or organic corn.
