Cotija Corn

The seasons are changing and early summer produce is beginning to peak, like sweet white corn. And when life gives you sweet white corn, make irresistibly delicious cotija corn—or elote—with this easy and flavorful grilling recipe. It’s great for summer barbecues, your Cinco de Mayo celebration or anytime!

Ingredients

  • 4 ears sweet white corn
  • 1/4 cup butter, melted
  • 1/2 cup cotija cheese, crumbled
  • 4 Tbsp. cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Grill corn until kernels are easily pierced with a fork.
  2. Brush on butter and sprinkle with cotija and cilantro. Serve with lime wedges.
