Cucumber and Chickpea Salad with Citrus

Ingredients

  • ☐ 3 tbsp olive oil
  • ☐ 1 can (~16 oz) garbanzo beans, any variety, drained
  • ☐ 1 cup cherry tomatoes, halved
  • ☐ ¼ cup red onion, chopped
  • ☐ 1 clove garlic, minced
  • ☐ 2 tbsp fresh dill, chopped. (Or 1TBS dried dill)
  • ☐ 1 cucumber, chopped
  • ☐ ½ red bell pepper, chopped
  • ☐ ¼ cup sliced olives
  • ☐ 1½ tsp red wine vinegar
  • ☐ ½ lemon, juiced
  • ☐ ½ lime, juiced
  • ☐ ¼ cup fresh parsley, chopped
  • ☐ Cracked black pepper to taste
  • Optional
  • ☐ Grains of choice
  • ☐ Mixed greens


Kitchen Supplies needed:
☐ Measuring spoons and cups
☐ Medium saucepan
☐ Large mixing bowl


Directions

  1. Heat 2 tbsp of oil in a saucepan over medium heat. Add garlic, onions and dill. Stir in beans, cover and turn off heat. Set aside.
  2. Gently toss all remaining ingredients into large salad bowl. Add seasoned beans.
  3. Season to taste with salt and pepper.
  4. Serve as is or atop assorted greens or grains of choice.
