Ingredients
- ☐ 3 tbsp olive oil
- ☐ 1 can (~16 oz) garbanzo beans, any variety, drained
- ☐ 1 cup cherry tomatoes, halved
- ☐ ¼ cup red onion, chopped
- ☐ 1 clove garlic, minced
- ☐ 2 tbsp fresh dill, chopped. (Or 1TBS dried dill)
- ☐ 1 cucumber, chopped
- ☐ ½ red bell pepper, chopped
- ☐ ¼ cup sliced olives
- ☐ 1½ tsp red wine vinegar
- ☐ ½ lemon, juiced
- ☐ ½ lime, juiced
- ☐ ¼ cup fresh parsley, chopped
- ☐ Cracked black pepper to taste
- Optional
- ☐ Grains of choice
- ☐ Mixed greens
Kitchen Supplies needed:
☐ Measuring spoons and cups
☐ Medium saucepan
☐ Large mixing bowl
Directions
- Heat 2 tbsp of oil in a saucepan over medium heat. Add garlic, onions and dill. Stir in beans, cover and turn off heat. Set aside.
- Gently toss all remaining ingredients into large salad bowl. Add seasoned beans.
- Season to taste with salt and pepper.
- Serve as is or atop assorted greens or grains of choice.
