Ingredients
- 8 oz. Coleman Natural Ham, chopped into 1/2 inch pieces (or leftover sliced ham)
- 2 cups water
- 1 cup uncooked orzo pasta, regular or gluten-free
- 1/2 green onion, sliced
- 1 cup tomatoes, chopped
- 1 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Follow package instructions for orzo.
- Drain any excess water and rinse the orzo in cold water to avoid it from getting sticky.
- While the Orzo is cooking, chop the green onions, tomatoes and parsley.
- Place 1/2-inch pieces of ham in a heavy skillet over medium-high heat, stirring occasionally, to brown slightly on all sides. Set aside and allow to cool.
- In a large bowl combine all the ingredients. Cover and chill in refrigerator for approximately one hour. Stir and serve it cold.
