Orzo Salad with Coleman Ham

Ingredients

  • 8 oz. Coleman Natural Ham, chopped into 1/2 inch pieces (or leftover sliced ham)
  • 2 cups water
  • 1 cup uncooked orzo pasta, regular or gluten-free
  • 1/2 green onion, sliced
  • 1 cup tomatoes, chopped
  • 1 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Follow package instructions for orzo.
  2. Drain any excess water and rinse the orzo in cold water to avoid it from getting sticky.
  3. While the Orzo is cooking, chop the green onions, tomatoes and parsley.
  4. Place 1/2-inch pieces of ham in a heavy skillet over medium-high heat, stirring occasionally, to brown slightly on all sides. Set aside and allow to cool.
  5. In a large bowl combine all the ingredients. Cover and chill in refrigerator for approximately one hour. Stir and serve it cold.
