Ingredients
- 1 tsp. cooking oil*
- 8 oz. salmon
- 1 tsp. salt*
- 1/4 tsp. ground black pepper*
- 8 1/2 oz. rotini or fusilli pasta
- 1 1/2 cups snow peas
- 1 oz. butter*
- 1 1/2 tbsp. fresh dill, chopped
- juice of 1 lemon
- * Common pantry item.
Instructions
- Heat oil in a medium sauté pan over medium high heat.
- Season salmon with 1/2 tsp salt and 1/8 tsp. pepper.
- Add salmon to the pan and cook for 3-4 minutes on each side until almost cooked through; remove from pan and break into bite size pieces.
- Cook pasta following package instructions.
- Meanwhile, heat butter over medium heat in a medium saucepan. Add snow peas, season with remaining salt and pepper and cook for 2 minutes.
- Add salmon, pasta, 1 Tbsp. of dill and remaining ingredients to the snow peas, stir and heat for 2 minutes until warmed through.
