Seared Salmon with Grapefruit Relish on Baby Spinach

A grapefruit and herb relish elevates simple seared salmon.

Ingredients

  • 4 tbsp. vegetable oil
  • 4 (6 oz.) salmon fillets, skin on
  • Salt and pepper, to taste
  • 2 cups grapefruit segments, halved
  • 4 green onions, chopped
  • 1 yellow bell pepper, diced
  • 1/4 cup fresh tarragon leaves
  • 1/4 cup fresh chopped parsley
  • 1/4 cup olive oil
  • 2 tbsp. white wine vinegar
  • Salt and pepper, to taste
  • 6 cups baby spinach

Instructions

  1. Heat oil in a medium skillet over medium heat. Season salmon on both sides with salt and pepper. Place salmon in pan, skin side down, and cook over medium heat for 5 minutes. Flip salmon and cook for 3 minutes.
  2. Meanwhile, mix remaining ingredients except baby spinach in a medium bowl.
  3. To serve, place 1 1/2 cups spinach on each plate. Top with salmon and spoon on relish.
