Ingredients
- 8 oz. shrimp, peeled and deveined
- 3 pieces baby bok choy, cut into 1 1/2" slices
- 1 1/2 cups sliced carrots or carrot chips
- 1 1/2 tbsp. soy sauce
- 1 tsp. garlic*
- 1 1/2 tsp. olive oil*
- * Common pantry item.
Instructions
- Heat 1/2 tsp. olive oil in a medium sauté pan over medium high heat. Add shrimp and cook for 30-45 seconds on each side. Remove from pan.
- Add remaining oil to the pan. Add carrots and cook for 2 minutes.
- Add garlic and bok choy. Season with salt and pepper, and cook for 1 additional minute.
- Return shrimp to pan and add soy sauce, salt and pepper. Cook for 1 minute until shrimp is cooked.
