Shrimp with Baby Bok Choy

Soy, garlic, and oil combine in an earthy sauce over crunchy carrot chips, bittersweet bok choy, and juicy, fresh shrimp in a soothing and savory dinner that’s perfect for a nutritious nightcap.

Ingredients

  • 8 oz. shrimp, peeled and deveined
  • 3 pieces baby bok choy, cut into 1 1/2" slices
  • 1 1/2 cups sliced carrots or carrot chips
  • 1 1/2 tbsp. soy sauce
  • 1 tsp. garlic*
  • 1 1/2 tsp. olive oil*
  • * Common pantry item.

Instructions

  1. Heat 1/2 tsp. olive oil in a medium sauté pan over medium high heat. Add shrimp and cook for 30-45 seconds on each side. Remove from pan.
  2. Add remaining oil to the pan. Add carrots and cook for 2 minutes.
  3. Add garlic and bok choy. Season with salt and pepper, and cook for 1 additional minute.
  4. Return shrimp to pan and add soy sauce, salt and pepper. Cook for 1 minute until shrimp is cooked.
