Ingredients
- ☐ 4 (or more) spring roll wrappers
- ☐ 4 Bibb lettuce leaves
- ☐ ½ cup cucumbers, cut into matchsticks
- ☐ ¼ cup carrots, shredded
- Optional
- ☐ Two scallions, sliced into thin strips
- ☐ Cilantro leaves, mint, basil
- ☐ Cooked shrimp, pork or tofu
Kitchen Supplies needed:
☐ Pot for rice noodles
☐ Measuring spoons and cups
☐ Small-medium mixing bowl
☐ Towel
☐ Small mixing bowl for sauce of choice
Directions
- Wash your hands with soap and water.
- Rinse all fresh produce under cold running water prior to prepping.
- In a pot of boiling water, cook the rice noodles for 3-5 minutes until soft.
- Fill a small-medium bowl with warm water. One at a time, place wrapper in water until it becomes soft. Remove from water and blot on a towel.
- Fill with lettuce, noodles, cucumber, carrots and any additional fillings you desire.
- Fold top and bottom of spring roll wrappers in and then fold wrapper around to cover ingredients.
- Repeat with remaining wrappers and ingredients and serve with your favorite dipping sauce to enjoy.
Two Spring Roll Dipping Sauces
HONEY SESAME SAUCE
☐ 1/2 cup (68 grams) honey
☐ 1 tsp sesame oil
☐ 1 tsp rice wine vinegar
☐ 1/4 cup (34 grams) low sodium soy sauce
☐ 1/2 tsp fresh ginger, grated
☐ Toasted sesame seeds for garnish
SAVORY PEANUT SAUCE
☐ 1 tbsp hoisin sauce
☐ 3/4 cup (102 grams) peanut butter, smooth or chunky
☐ 2 tbsp low sodium soy sauce
☐ Warm water to help thin the sauce
☐ Chopped peanuts for garnish (optional, omit if using chunky peanut butter)
Instructions
HONEY SESAME SAUCE
- In a small mixing bowl, add the honey, sesame oil and vinegar and soy sauce. Whisk until combined.
- Pour into serving bowl and top with ginger and sesame seeds.
SAVORY PEANUT SAUCE
- In a small mixing bowl, add the hoisin sauce, peanut butter, soy sauce and add 2 tbsp warm water. You may need more depending on how thick your peanut butter is. Whisk until smooth.
- Pour into serving bowl and top with chopped peanuts
