Ingredients

  • ☐ 4 (or more) spring roll wrappers
  • ☐ 4 Bibb lettuce leaves
  • ☐ ½ cup cucumbers, cut into matchsticks
  • ☐ ¼ cup carrots, shredded
  • Optional
  • ☐ Two scallions, sliced into thin strips
  • ☐ Cilantro leaves, mint, basil
  • ☐ Cooked shrimp, pork or tofu


Kitchen Supplies needed:
☐ Pot for rice noodles
☐ Measuring spoons and cups
☐ Small-medium mixing bowl
☐ Towel
☐ Small mixing bowl for sauce of choice


Directions

  1. Wash your hands with soap and water.
  2. Rinse all fresh produce under cold running water prior to prepping.
  3. In a pot of boiling water, cook the rice noodles for 3-5 minutes until soft.
  4. Fill a small-medium bowl with warm water. One at a time, place wrapper in water until it becomes soft. Remove from water and blot on a towel.
  5. Fill with lettuce, noodles, cucumber, carrots and any additional fillings you desire.
  6. Fold top and bottom of spring roll wrappers in and then fold wrapper around to cover ingredients.
  7. Repeat with remaining wrappers and ingredients and serve with your favorite dipping sauce to enjoy.

Two Spring Roll Dipping Sauces
HONEY SESAME SAUCE
☐ 1/2 cup (68 grams) honey
☐ 1 tsp sesame oil
☐ 1 tsp rice wine vinegar
☐ 1/4 cup (34 grams) low sodium soy sauce
☐ 1/2 tsp fresh ginger, grated
☐ Toasted sesame seeds for garnish

SAVORY PEANUT SAUCE
☐ 1 tbsp hoisin sauce
☐ 3/4 cup (102 grams) peanut butter, smooth or chunky
☐ 2 tbsp low sodium soy sauce
☐ Warm water to help thin the sauce
☐ Chopped peanuts for garnish (optional, omit if using chunky peanut butter)

Instructions
HONEY SESAME SAUCE

  1. In a small mixing bowl, add the honey, sesame oil and vinegar and soy sauce. Whisk until combined.
  2. Pour into serving bowl and top with ginger and sesame seeds.

SAVORY PEANUT SAUCE

  1. In a small mixing bowl, add the hoisin sauce, peanut butter, soy sauce and add 2 tbsp warm water. You may need more depending on how thick your peanut butter is. Whisk until smooth.
  2. Pour into serving bowl and top with chopped peanuts
