Ingredients
- 1 tsp. cooking oil*
- 8 oz. ground beef
- 1/2 tsp. salt*
- 1/4 tsp. ground black pepper*
- 2 red bell pepper
- 1 cup pre-cooked Veetee style or brown rice
- 1 cup pico de gallo
- 1/2 cup Raley's 4 Cheese Mexican Shredded Cheese Blend
- *Common pantry item.
Instructions
- Cut bell peppers in half and remove seeds. Place in microwave safe dish, set aside.
- Heat rice according to package instructions.
- Heat cooking oil in large sauté pan over medium heat. Add ground beef to pan, season with salt and pepper, and cook 3-4 minutes, stirring occasionally, until browned.
- Stir in pico de gallo and rice and cook for 1 additional minute.
- Fill pepper halves with beef and rice filling. Top evenly with cheese.
- Cover and microwave for 2 minutes.
