Stuffed Bell Peppers

Inspired by the flavors of Mexico, sweet, vibrant bell peppers are stuffed with a hearty blend of juicy ground beef, sharp, shredded cheeses, belly-warming rice, and spicy Pico de Gallo.

Ingredients

  • 1 tsp. cooking oil*
  • 8 oz. ground beef
  • 1/2 tsp. salt*
  • 1/4 tsp. ground black pepper*
  • 2 red bell pepper
  • 1 cup pre-cooked Veetee style or brown rice
  • 1 cup pico de gallo
  • 1/2 cup Raley's 4 Cheese Mexican Shredded Cheese Blend
  • *Common pantry item.

Instructions

  1. Cut bell peppers in half and remove seeds. Place in microwave safe dish, set aside.
  2. Heat rice according to package instructions.
  3. Heat cooking oil in large sauté pan over medium heat. Add ground beef to pan, season with salt and pepper, and cook 3-4 minutes, stirring occasionally, until browned.
  4. Stir in pico de gallo and rice and cook for 1 additional minute.
  5. Fill pepper halves with beef and rice filling. Top evenly with cheese.
  6. Cover and microwave for 2 minutes.
