Recipe: The Mighty Mushroom Blended Burgers

Ingredients

  • ☐ ½ pound any variety mushroom (cremini, baby belle recommended)
  • ☐ 1 tablespoon olive oil, divided
  • ☐ 1 pound ground beef (85%, 90%, or 93% lean would be recommended) OR ground turkey
  • ☐ ½ teaspoon salt
  • ☐ ½ teaspoon black pepper
  • ☐ 4 buns
  •  
  • Toppings
  • ☐ Lettuce
  • ☐ Tomato, sliced
  • ☐ Any variety onion, sliced
  • ☐ Sliced cheese of your choice
  • ☐ Mustard
  • ☐ Mayonnaise
  • ☐ Ketchup


Instructions:

  1. Finely dice mushrooms or gently pulse in food processor.
  2. In skillet, warm 1 tablespoon olive oil on medium-high heat and add mushrooms, cooking 5-7 minutes, or until golden brown.
  3. Remove from heat and cool for 5 minutes. Transfer cooled mushrooms to medium bowl.
  4. Add ground beef and salt and pepper, mixing until combined. Make 4 patties.
  5. Add remaining olive oil to pan and cook burger patties on medium-high heat until internal temperature reaches at least 160 F. Or grill if preferred, flipping once cook to 160 F.
  6. Plate and add desired toppings to bun.
