Ingredients
- ☐ 1 pound firm or extra firm tofu
- ☐ ½ medium onion, chopped
- ☐ ½ red or green bell pepper, chopped or Roasted red bell peppers work too
- ☐ 1 fresh clove garlic, minced
- ☐ ½ tsp turmeric powder
- ☐ ½ tsp cumin
- ☐ ½ tsp paprika
- ☐ 1-2 TBS nutritional yeast
- ☐ 2 TBS extra virgin olive oil
- ☐ 2 TBS milk (any variety), almond milk
- ☐ 4 whole wheat tortillas
- ☐ Grated cheese (optional)
- ☐ Salsa (optional)
Instructions:
- Drain tofu, if you have a press, press tofu to remove more water. Alternatively, cut tofu into slices and pat dry with a clean dish towel or paper towels.
- In a bowl, mash tofu with a fork to create crumbles.
- Heat oil in a large skillet, add onions, peppers and spices, cook until onions are softened.
- Add tofu and stir, add nutritional yeast and milk of choice and stir until heated through and yellow color from turmeric has been distributed.
- Serve hot with toast, optional salsa, and home fries. A perfect egg-free breakfast!
