1 box yellow cake mix
2 cups shredded coconut, plus additional for rolling
1/4 cup cream of coconut (found in the Liquor Dept.)
1/4 cup butter, softened
2 eggs

Prep: 20 minutes, Cook: 10 to 12 minutes, Makes: about 3 dozen cookies

1. Preheat oven to 350°F. Stir together cake mix, coconut, cream of coconut, softened butter and eggs in a medium bowl.

2. Roll into balls and roll in additional coconut. Place on a parchment-lined baking sheet and bake for 10 to 12 minutes.
