A Trio of Chocolate Drop Cookies
A Trio of Chocolate Drop Cookies
1/2 cup butter softened
1 cups sugar
3 eggs
2 tsp. vanilla extract
4 (1- oz.) squares unsweetened chocolate melted and slightly cooled
2 cups flour
2 tsp. baking powder
1/4 tsp. salt

Prep: 15 minutes, Cook: 10 to 12 minutes
Makes: about 3 dozen cookies

1. Preheat oven to 350°F and lightly spray baking sheets with nonstick cooking spray. Cream butter and sugar in large bowl of an electric mixer until well combined.

2. Add eggs, one at a time, beating well after each addition. Mix in vanilla and chocolate. Stir in remaining ingredients. Drop by rounded spoonfuls onto prepared sheets.

3. Bake for 10 to 12 minutes or until cookies spring back when lightly touched.


Crinkles: Refrigerate dough for at least 4 hours; roll into balls and coat in 3/4 cup powdered sugar before baking.

Orange Cherry Chunk: 
Substitute orange extract for vanilla extract. Stir in 1 (6-oz.) bag dried cherries and 1 cup each: coarsely chopped toasted walnuts and bittersweet chocolate chips. Drizzle with melted white chocolate when cool, if you like.

Double Chocolate and Mint:
 Substitute mint extract for vanilla extract; stir in 1 cup miniature chocolate chips. In a small bowl, beat together 1½ cups powdered sugar and 1/2 cup softened butter; place a dab between 2 cooked cookies to make a sandwich. Roll edges in 1/2 cup finely crushed peppermint candies.
