Low-Fat Ginger Cookies
1/4 cup Earth Balance Buttery Spread
1/2 cup dark brown sugar packed
2 large egg whites (or 1/4 cup egg substitute)
2 tsp. vanilla extract
1-1/2 cups flour
1/2 cup soy flour
2 tbsp. crystallized ginger minced
3/4 tsp. ground ginger
1/2 tsp. baking soda
1/4 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. salt
These attractive ginger cookies are studded with crystallized ginger for great flavor and a little sparkle.

Preheat oven to 375F and lightly grease cookie sheets. Cream together buttery spread and brown sugar until light and fluffy. Stir in egg whites and vanilla. In a small bowl, mix together all dry ingredients; add butter to mixture and mix until well combined. Turn dough onto a lightly floured surface and roll out 1/8 inch thick; cut into desired shapes. Place 1 inch apart on cookie sheets and bake for about 10 minutes or until golden brown. Let cool on cookie sheets for about 10 minutes, then transfer to wire racks to finish cooling.

Makes about 75 (2-inch) cookies.
