Wine Soaked Fig and Arugula Salad
Wine Soaked Fig and Arugula Salad
8 ea dried Mission figs stemmed and quartered
1/2 cup red wine
1/4 cup Raleys Black Fig Infused Balsamic Vinegar
3 tbsp. extra virgin olive oil
Raleys Freshly Ground Sea Salt and Pepper to taste
1 (5- oz.) bag arugula
1/2 cup shaved dry Jack, Parmesan or Asiago cheese
1/4 cup chopped walnuts toasted

Prep time: 15 minutes, Cool time: 15 minutes Cook time: 10 minutes Bring figs and wine to a boil in a small saucepan; reduce heat and simmer for 10 minutes or until wine is absorbed. Remove from heat and let cool. Whisk together vinegar and oil, then season with salt and pepper. Place arugula in a medium bowl and toss with dressing. Place on 4 salad plates or bowls and top equally with figs, cheese and walnuts. Makes 4 servings.
