Pancetta Wrapped Meatballs
Pancetta Wrapped Meatballs
1 lb. ground round
1 1.5- oz. package meat loaf seasoning mix (scant 2 tbsp.)
1/2 cup apples finely chopped
2 cloves garlic minced
1 4- oz. package of pancetta

Combine 1 lb. ground round with 1/2 of a 1.5-oz. package meatloaf seasoning mix (scant 2 tbsp.), 1/2 cup finely chopped apples and 2 cloves minced garlic; form into 12 balls. Wrap each meatball with 1 unwound slice pancetta (from a 4-oz. package) and place seam side down on a baking sheet. Bake at 350° F for about 20 minutes or until cooked through. Makes 4 servings.
