Grilled Mango Salad Pizza
Grilled Mango Salad Pizza
1 tbsp. extra virgin olive oil
1 tbsp. white balsamic vinegar
1/2 tbsp. honey
Salt and freshly ground pepper to taste

1 Mama Mary's Thin and Crispy Pizza Crust (1/2 of a 16-oz. package)
Extra virgin olive oil
4 oz. fresh mozzarella cheese
2 cups lightly packed Earthbound Farm Fresh Herb Salad Blend
8 strips bacon (optional), cooked crisp and broken into 1/2-inch pieces
1 large firm but ripe mango, peeled, pitted and cut into small bite-size pieces
1/4 cup minced red onion

Prep: 15 minutes, Cook: 6 to 7 minutes, Makes: 8 slices

1. Whisk together all dressing ingredients in a medium bowl; set aside.

2. Cut pizza crust into 8 equal wedges and brush both sides lightly with olive oil. Grill over medium-high heat for 1 to 2 minutes or until crisp on the bottom. Turn and top each wedge with equal amounts of cheese.

3. Move to indirect heat (or over a burner that is off) and cook for about 5 minutes more to melt cheese; remove from grill.

4. Place remaining salad ingredients in bowl with dressing and toss well to coat. Pile onto pizza wedges and serve immediately.
