Spicy Oven Fried Chicken with Cool Cilantro Sauce
1/2 cup Straus Family Creamery Organic Plain Yogurt
1 tbsp. lemon juice
1/2 tbsp. minced garlic
1 tsp. McCormick Chipotle Chile Pepper, divided
1/2 tsp. salt
1 whole cut up chicken
1 cups panko breadcrumbs
1/2 cup grated Parmesan cheese
2/3 cup flour
2 eggs, beaten

Cool Cilantro Sauce:
1 cup fresh cilantro
1/2 cup coarsely chopped green onions
1 cup Straus Family Creamery Plain Yogurt

Prep: 20 minutes, Marinate and stand: 55 minutes
Cook: 35 minutes Serves: 4 to 6

1. To prepare chicken, stir together yogurt, lemon juice, garlic, 3/4 tsp. chipotle pepper and salt in a medium bowl; add chicken and refrigerate for 45 minutes.

2. Stir together breadcrumbs, Parmesan cheese and remaining chipotle pepper in a medium bowl. Preheat oven to 400°F and line a baking sheet with foil sprayed with nonstick cooking spray.

3. Remove chicken from marinade and shake off excess; dredge in flour. Dip in beaten egg and coat with breadcrumb mixture; place on prepared sheet and let stand for 10 minutes. Bake for 35 minutes or until chicken is cooked through.

4. To prepare sauce, finely chop cilantro and green onions in a food processor. Stir in yogurt; season to taste with salt. Serve with chicken.
