Mandarin Spinach Salad
Mandarin Spinach Salad
Tarragon Dressing:
1/4 cup Pomegranate Infused Red Wine Vinegar
3 tbsp. extra virgin olive oil
1 tbsp. honey
1 tbsp. fresh or 1 tsp. dried tarragon
Freshly ground sea salt and pepper to taste
Spinach Salad:
4 Melissa's Crpes (in our Produce Dept.)
Olive oil cooking spray
1 (9- oz.) package fresh spinach
1 (11- oz.) can mandarin oranges drained
1/2 cup red onion slivers

Prep time: 10 minutes
Cook time: about 5 minutes

Whisk together all dressing ingredients in a small bowl; set aside. Preheat oven to 350°F. Cut crêpes in half, then into 1/4-inch strips and place on a baking sheet. Spray liberally with cooking spray; fluff with your hands to coat evenly and spray again. Bake for 2 minutes, then fluff with tongs or 2 forks. Bake for 2 minutes more; fluff and spray again. Cook for 1 to 2 minutes more or until a light golden brown; let cool to crisp. Place spinach, oranges and red onion in a large salad bowl; drizzle with dressing and toss well to coat.  Place crêpes in a small bowl and serve with salad.

Makes 6 to 8 servings.
