Fortune Cookies
2 tbsp. butter, melted
1/3 cup sugar
2 egg whites
1-1/2 tsp. vanilla extract
1/4 tsp. salt
1/2 cup flour
These need to be shaped while they're hot, so don't try to do too many at one time!

Prep time: 30 minutes, Cook time: 20 minutes total, Makes: 20 cookies

1. Preheat oven to 400F and spray a large baking sheet with nonstick cooking spray. Write fortunes on 20 small strips of colored paper and set aside. Place butter in a small mixing bowl. Whisk in sugar, egg whites, vanilla and salt, mixing well. Add flour and whisk until smooth.

2. Place 4 tsp. batter 3-inches apart prepared baking sheet. With the back of a spoon, spread batter into a very thin, 3-inch circle. Repeat to make 4 circles. Bake for 4 minutes or until lightly browned on the edges.

3. Working quickly, loosen cookies with a thin spatula and place a fortune in the center of the hot cookie. Quickly fold the cookie in half and press the edges together.

4. Fold the cookie over the edge of a bowl to create the fortune cookie shape. Repeat with remaining cookies and batter. (If cookies won't bend, return the baking sheet to the oven for a minute to soften.) Let cool completely to crisp. Store in an airtight container.
