Shepherd's Pie
2 lb. lean ground beef
2 medium carrots peeled and sliced
1 large onion peeled and coarsely chopped
2 (14.5- oz.) cans tomatoes diced
2 (.87- oz.) packages brown gravy mix
1 tsp. thyme
1/4 tsp. pepper
1 cup fresh or frozen peas
4 cups prepared mashed potatoes
1/2 cup Cheddar cheese shredded
Prep time: 10 minutes
Cook time: 45 to 50 minutes

Preheat oven to 375F. Brown ground beef in a large pot until cooked through, stirring frequently. Drain fat. Add carrots and onion to pot; cook over medium heat for 5 minutes or until vegetables are tender. Stir in tomatoes, gravy mix, thyme and pepper; cook for 5 minutes or until thickened. Stir in peas and transfer to a 13-by-9-inch baking dish. Spread mashed potatoes over the top. Bake for 20 minutes or until mixture is bubbling and potatoes are lightly browned. Top with cheese and cook for 10 minutes more.

Makes 8 generous servings.
