Make-Ahead Mashed Potatoes
12 large baking potatoes
8 oz. sour cream
8 oz. Neufchâtel cheese (light cream cheese)
4 tbsp. butter
Garlic salt and pepper to taste
Prep time: 20 minutes
Cook time: 20 minutes plus 1 hour

Peel potatoes and cut into chunks. Boil until
cooked through; drain. Mash well and stir in
remaining ingredients. Cover and refrigerate up to
two days. When ready to serve, place in a buttered
glass baking dish. Preheat oven to 350ºF. Cover
with foil and bake for 1 hour or until heated
