Shrimp Pilaf
Shrimp Pilaf
1 cups water
1 cup Uncle Ben's Quick Brown Rice
1 tsp. butter
3 tbsp. finely chopped red onion
2 tbsp. finely chopped fresh parsley
2 tbsp. finely chopped capers
1 tbsp. fresh lemon juice
1 tbsp. extra virgin olive oil
1 (6 oz.) can Orleans Tiny Shrimp, drained
Salt and pepper to taste

Prep: 15 minutes, Cook: 10 minutes, Serves: 2 (recipe may be doubled)

1. Bring water to a boil in a medium saucepan. Add rice and butter; cook according to package directions until done.

2. In a bowl, toss together rice, onion, parsley and capers.

3. Drizzle mixture with lemon juice and olive oil and toss to combine ingredients.

4. Add shrimp to rice mixture and stir lightly to mix. Season to taste with salt and pepper and serve immediately.
