Wilted Lettuce & Peas
Wilted Lettuce and Peas
2 tbsp. butter
2 tbsp. shallots minced
6 cups romaine lettuce coarsely chopped
3 cups fresh or frozen peas
1/4 tsp. turmeric or a pinch of saffron
Salt and freshly ground pepper to taste

Prep: 15 minutes, Cook: about 10 minutes, Serves: 6 to 8 

1. Melt butter in a large skillet over medium heat. Add shallots and cook, stirring frequently, for 4 minutes or until soft.

2. Add lettuce, peas and turmeric; cook for 3 minutes, stirring frequently, or until lettuce is wilted and peas are warm. Season to taste with salt and pepper.
