BLT Soup
1 (32- oz.) container chicken broth
1 (29- oz.) can Cento Crushed Tomatoes
1 (1.5- oz.) package spaghetti sauce mix
1 cup chopped celery
1 cup chopped onion
8 strips center cut bacon, coarsely chopped and divided
3 cups coarsely chopped fresh spinach
freshly ground pepper to taste

Prep: 10 minutes, Cook: 20 minutes, Serves: 4 to 6

1. Place broth, tomatoes, spaghetti sauce mix, celery and onions in a large pot; cover and bring to a boil over high heat. Reduce heat and simmer for 20 minutes.

2. Cook bacon in a medium skillet until very crisp; drain well.

3. Remove soup from heat and stir in spinach and half the cooked bacon. Season to taste with pepper.

4. Ladle into bowls and top each with equal amounts of remaining bacon.
