Caesar Potatoes
Caesar Potatoes
1 lb. Yukon Gold (or russet) potatoes
1/2 cup shredded Parmesan cheese
1/2 cup milk
1/2 cup light Caesar dressing
1/4 cup snipped fresh chives (or green onion tops)

Cube 1 lb. Yukon Gold or russet potatoes and place in a large microwave-safe bowl. Cover and microwave on HIGH for 12 minutes or until soft. Mash until smooth, then stir in 1/2 cup each: shredded Parmesan cheese, milk and light Caesar dressing. Stir in 1/4 cup snipped fresh chives or green onion tops and season to taste with salt and pepper.

Makes 4 servings.
