Basic Nut Brittle
Basic Nut Brittle
2 cups sugar
3/4 cup light corn syrup
1 cups water
1 lb. shelled nuts of your choice (about 3 cups)
3 tbsp. butter cut into pieces
2 tsp. baking soda
1 tsp. vanilla

Prep: 10 minutes, Cook: 40 minutes, Makes: 2 lbs.

1. Butter the bottom and sides of a large baking sheet; set aside. Place sugar, corn syrup and water in a large, heavy saucepan over medium heat; stir well to combine. Cook to hard ball stage (264°F) without stirring, for about 25 minutes.

2. Remove from heat and stir in nuts and butter. Cook over medium heat, stirring constantly, for 5 to 7 minutes or until mixture is slightly thickened and is a light caramel color.

3. Remove from heat and stir in baking soda and vanilla. Pour onto prepared sheet, quickly spreading to almost fill sheet. Let cool completely before breaking into pieces.

Spicy Pistachio Brittle with Sea Salt
Prepare as above, using pistachios for the shelled nuts and adding 1/2 tsp. chile powder with the nuts. Sprinkle lightly with freshly ground sea salt immediately after spreading out on sheet.

Rosemary Infused Pine Nut Brittle
Prepare as above, using toasted pine nuts for the shelled nuts. Wrap five (4-inch) sprigs fresh rosemary in cheesecloth and add to the sugar mixture. Remove carefully before adding nuts.
