Grilled Shrimp with Papaya Salsa
Grilled Shrimp with Papaya Salsa
2 ripe tomatoes, chopped
1 small papaya, peeled, seeded and diced
1/2 small red onion, peeled and diced
2 tbsp. fresh lime juice
1 tbsp. oil
1 tbsp. chopped fresh cilantro
1/2 tsp. ground coriander
1/4 tsp. red pepper flakes
1/4 tsp. salt
1/4 tsp. pepper
1 to 2 lbs. large shrimp

Prep: 15 minutes, Marinate: 30 minutes,
Cook: 6 to 8 minutes, Serves: 4

1. Combine all ingredients except shrimp in a medium bowl. Place 1/2 cup mixture in a small bowl and set aside; pour remaining mixture in a large, shallow pan.

2. Using 4 skewers, skewer shrimp through the tails and place in shallow pan with salsa mixture, turning to coat. Cover and marinate for 30 minutes in the refrigerator.

3. Grill shrimp over medium-high heat for 6 to 8 minutes or until pink, turning and basting with salsa several times. Serve with reserved bowl of salsa.
