Make-Ahead Candied Carrots
Make-Ahead Candied Carrots
3 lb. carrots peeled
1/4 cup butter softened
1/4 cup brown sugar
3 tbsp. orange juice concentrate
1/4 tsp. salt
Prep time: 10 minutes
Cook time: 45 minutes

Cut carrots into 1-inch chunks. Boil in salted water for 5 minutes; drain. Mix carrots while hot with butter, brown sugar, juice concentrate and salt. Transfer to a buttered 2-quart baking dish. Recipe may be covered and refrigerated for up to 2 days at this point.) When ready to bake, preheat oven to 350F. Bake, covered, for 30 minutes. Uncover and bake for 15 minutes more.
