Ginger Orange Chicken
Ginger Orange Chicken
1 tbsp. flour
1 whole chicken
1/3 cup orange juice concentrate
1/3 cup dry sherry
1 tbsp. honey
1/2 tsp. garlic salt
1/4 tsp. ground ginger
2/3 cup chicken broth
2 tbsp. cornstarch
Salt and pepper

Prep: 10 minutes, Cook: About 1 hour, 20 minutes, Serves: 6

1. Preheat oven to 350°F. Place flour in an oven bag and shake to coat bag. Rinse chicken and pat dry; place in oven bag and set in a shallow baking pan.

2. Stir together juice concentrate, sherry, honey, garlic salt and ginger. Pour over chicken, loosening the skin along the breast bone and pouring some under the skin. Seal the bag with the supplied ties. Bake for 1 hour and 15 minutes.

3. Carefully cut open the bag (be careful of the steam) and remove the chicken. Pour the juices into a glass measuring cup. Skim off as much fat from the surface as possible and discard.

4. Mix broth and cornstarch and stir into the juices. Microwave on HIGH for 4 minutes or until mixture has boiled for a couple of minutes, stirring once or twice. Season to taste with salt and pepper. Serve sauce over chicken.
