Orange Almond White and Wild Rice
Orange Almond White and Wild Rice
1 cup Hinode White and Wild Rice
1 cup orange juice
3/4 cup chicken broth
2 tbsp. dry sherry
2 tbsp. butter
2 tsp. honey
1/4 tsp. ground ginger
1/4 tsp. garlic powder
1/4 tsp. pepper
1/4 cup sliced almonds
Prep time: 5 minutes
Cook time: 25 minutes

In a medium saucepan, stir together all ingredients except almonds and bring to a boil. Reduce heat and simmer, covered, for 20 to 25 minutes or until most of the liquid has been absorbed. Remove from heat and let stand for 5 minutes. Transfer to a serving dish and top with almonds.

Makes 4 to 6 servings.

Tip! To toast almonds, cook on a baking sheet at 375F for 5 to 10 minutes, checking and stirring frequently. Or, cook in a small skillet over medium heat for about 5 minutes, stirring frequently until golden brown.
