Smoked Cheddar Potato Scallop
Smoked Cheddar Potato Scallop
2 tbsp. butter
2 tbsp. flour
1 cup broth
1/2 cup fat-free half-and-half
1-1/3 cups smoked Cheddar cheese* shredded
1 ea large or 2 small green onions thinly sliced
3/4 tsp. garlic salt
1/4 tsp. pepper
4 cups frozen Ore-Ida Southern Style Hash Browns (cubes) thawed
1.3 cups *SUBSITUTE if smoked cheddar not available* sharp Cheddar cheese shredded
Prep time: 10 minutes
Cook time: 50 to 55 minutes

Preheat oven to 375F and coat a 9-inch baking dish with nonstick cooking spray. Melt butter in a small saucepan. Stir in flour and cook for 1 minute. Slowly whisk in broth and half-and-half, then add cheese, a handful at a time. Add remaining ingredients and stir well; turn into prepared dish. Bake for 50 to 55 minutes or until potatoes are lightly browned.

Makes 6 to 8 servings.
