Salmon with Honey Balsamic Glaze
Salmon with Honey Balsamic Glaze
2 lbs. salmon fillets
1 tbsp. olive oil
1/4 cup honey
1/4 cup balsamic vinegar
1 (5- oz.) bag spring mix greens
1 cup fresh raspberries
2 tbsp. sliced fresh basil

Prep: 10 minutes, Cook: 5 to 10 minutes, Serves: 8 to 10

1. Rinse fish and pat dry; brush cooking surface with oil. Grill or broil over medium heat for 5 to 10 minutes, depending on the size and thickness of the fish. Fish is done when it reaches an internal temperature of 150°F and flakes easily when tested with a fork.

2. Meanwhile, combine honey and vinegar in a small saucepan. Bring to a boil; reduce heat and simmer for 5 minutes.

3. Transfer cooked fish to a platter lined with greens; drizzle with honey mixture and sprinkle with raspberries and basil.

Tip: If you're grilling, use a grill basket. It will make turning the large pieces of fish much easier.
