Santa Cruz Seafood Sandwiches
1 (12- oz.) bag frozen cooked large shrimp, thawed, well-drained, tails removed and coarsely chopped
1 cup diced jicama
2 hard-cooked eggs, peeled and chopped
1 large tomato, chopped
1/4 cup minced green pepper
1/4 cup chopped fresh cilantro
1/4 cup light mayonnaise
1 tbsp. dry Caesar salad dressing mix (from a 1.2-oz. package)
1 tsp. lemon juice
4 butter lettuce leaves
4 croissants, cut in half horizontally

Prep: 20 minutes, Serves: 4

1. In a medium bowl, stir together all ingredients except lettuce and croissants.

2. Place 1 lettuce leaf on each split croissant. Top with equal amounts of shrimp salad and serve immediately.

Lower-carb option: Instead of serving salad on a croissant, serve on a bed of lettuce, in a tomato shell or on an avocado half.
