Banana, Flax and Pecan Bread
Banana, Flax and Pecan Bread
1 cup whole wheat flour
1 cup Spectrum Essentials Ground FlaxSeed
1/2 cup Splenda
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup very ripe mashed bananas
1/2 cup Tree Top Natural Apple Sauce
1/2 cup raisins
1/4 cup chopped pecans
2 egg whites
1 egg

Prep: 15 minutes, Cook: 30 minutes, Makes: 8 to 10 servings

1. Preheat oven to 350°F and spray 2 mini loaf pans with nonstick cooking spray. In a large bowl, stir together flour, flaxseed, Splenda, baking powder, baking soda and salt.

2. In a medium bowl, stir together remaining ingredients. Pour over dry ingredients and stir just until dry ingredients are moistened.

3. Spoon batter into prepared pans and bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool on wire racks for 10 minutes.
