Bourbon and Cracked Pepper Marinated Beef
Bourbon and Cracked Pepper Marinated Beef
1/4 cup bourbon
1/4 cup cider vinegar
3 tbsp. tomato paste
2 tbsp. brown sugar
2 tbsp. molasses
1/2 tsp. each: salt and coarse black pepper
1 lb. cross rib steaks
Prep time: 10 minutes
Marinate time: 24 hours
Cook time: 15 to 20 minutes

Combine all ingredients except steaks in a small saucepan. Bring to a boil; reduce heat and simmer for 5 minutes. Let cool, then pour into a large resealable plastic bag. Add steaks and seal bag. Let marinate, refrigerated, for at least 24 hours if possible. Remove from bag and cook on a grill over medium heat for about 4 to 5 minutes per side for medium or until steaks reach desired doneness. Let stand for
5 minutes before slicing.

Makes 4 servings.

Toss slices of leftover beef with warmed
barbecue sauce. Spoon into rolls or a baked potato.
