Rosemary Pork Chops with Marmalade Glaze
1-1/2 lb. pork rib chops thick-cut
Salt and freshly ground pepper
2 tbsp. fresh rosemary divided
1 tbsp. fresh parsley chopped
1 tbsp. canola oil
1/2 cup orange marmalade
1/2 cup sweet wine, such as Moscato or Gewurztraminer
2 tbsp. lemon juice
1 tbsp. butter
Prep time: 15 minutes
Cook time: 40 minutes

Rinse pork and pat dry; sprinkle with salt, pepper, 1-1/2 tbsp. rosemary and parsley. Heat oil in a large skillet and cook pork over medium-high heat until browned on both sides. Reduce heat and cook over medium-low heat for 10 to 15 minutes or until internal temperature reaches 145F. Remove from skillet and keep warm. Add marmalade, wine, lemon juice and butter to the skillet. Bring to a boil; reduce heat and simmer for 10 minutes or until mixture forms a glaze. Return cooked pork to skillet and cook for 5 minutes more. Sprinkle with remaining rosemary.
