French Tuna Salad
French Tuna Salad
3/4 lb. small red potatoes
1/2 lb. fresh green beans
3 (3- oz.) pouches chunk light tuna chilled
2 medium tomatoes cut into eighths
1/4 cup red onion minced
3/4 cup balsamic vinaigrette chilled
Prep time: 15 minutes

Cook potatoes in boiling water for 10 to 15 minutes or until
tender when pierced with a skewer. While potatoes are
cooking, trim away stem ends from green beans and cook in
boiling water for 2 minutes. Drain potatoes and beans and
plunge into ice water to quick chill. Pile tuna onto 4 salad
plates and arrange potatoes, beans and tomatoes on the
plates. Sprinkle with onions and drizzle with dressing.

Makes 4 servings.

Tip! In recipes, a 3-ounce pouch of tuna is interchangeable
with a 6-ounce can (drained).
