Portabella Mushroom Burgers
Portabella Mushroom Burgers
4 large portabella mushrooms, stems removed
1/2 cup balsamic vinaigrette
1 cup shredded Italian blend cheese
1/4 cup mayonnaise
2 tbsp. pesto sauce
4 (4-inch) sections unsliced French bread, sliced horizontally and lightly toasted on grill
1 cup spring mix
4 (3-inch wide) strips roasted red peppers
Thinly sliced red onion

Prep: 10 minutes, Marinate: 15 minutes
Cook: 8 to 10 minutes, Serves: 4

1. Place mushrooms stem side up on a baking sheet and drizzle with dressing; let stand for 15 minutes to marinate. Turn to coat both sides with dressing, then place mushrooms on a grill over medium heat.

2. Grill for 5 minutes, then turn and top with equal amounts of cheese. Grill for an additional 3 to 4 minutes.

3. Meanwhile, stir together mayonnaise and pesto in a small bowl. Spread a heaping tablespoon on the bottom half of each bread section.

4. Top each with spring mix, roasted peppers and a cooked mushroom. Add onion slices and cover with top of bread.
