Fat-Free Molasses Cookies
1 cup raisins
1/3 cup hot Illy Coffee
1 cup sugar
1/4 cup molasses
2 egg whites
2 cups flour
2 tsp. baking soda
1 tsp. each: cinnamon and ground ginger
1/2 tsp. ground cloves
1/4 tsp. salt
1/4 cup sugar

Purée 1 cup raisins and 1/3 cup hot illy Coffee in a blender or food processor. Transfer to a large bowl and stir in 1 cup sugar, 1/4 cup molasses and 2 egg whites. Stir in 2¼ cups flour, 2 tsp. baking soda, 1 tsp. each: cinnamon and ground ginger, 1/2 tsp. ground cloves and 1/4 tsp. salt; mix well. Cover and refrigerate for 2 to 3 hours for easier handling. Preheat oven to 350°F. Shape dough into tablespoon-size balls and roll in 1/4 cup sugar. Place 2 inches apart on ungreased cookie sheets. Bake for 8 to 12 minutes or until set, but still soft in the center. Cool for 1 minute, then remove from cookie sheets and let cool completely on a baking rack.

Makes 30 cookies.
