Figgy Beef & Focaccia Bites
Figgy Beef & Focaccia Bites
1/2 cup chopped dried black mission figs
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/2 lb. Raley's Beef tenderloin California raised USDA choice
Sea salt and freshly ground pepper
1 loaf Focaccia Bread (in our Bakery), warmed
1/2 cup lightly packed baby arugula
14 thin slices roma tomato
fresh basil snipped

Prep: 15 minutes, Cook: 20 minutes, Makes: 14 pieces

1. Simmer figs, wine and vinegar together in a small saucepan over medium-low heat for 10 minutes or until most but not all of the liquid is absorbed; set aside.

2. Season beef with salt and pepper; grill, broil or pan sear for a few minutes on each side until it’s cooked to your liking. Let stand for 5 minutes, then slice very thinly.

3. Cut focaccia bread into 7 strips crosswise, then cut each strip in half. Cut each piece in half horizontally and place equal amounts of arugula on the bottom pieces. Top each with a tomato slice, then beef slices and fig mixture. Sprinkle with basil and close sandwiches. Serve warm. Recipe may be doubled.
