Thai Lemon Grass Soup
Thai Lemon Grass Soup
3 stalks lemon grass
6 cups reduced-sodium chicken broth
2 cups shredded cooked rotisserie chicken
1/2 cup Azumaya Asian Style Noodles (thin cut)
1/2 cup Szechwan chili sauce
1/4 cup sliced green onion tops

Prep: 15 minutes, Cook: 30 minutes, Serves: 4 to 6

1. Trim away tops of lemon grass stalks, leaving the 4- or 5-inch base; cut in half lengthwise.

2. Add lemon grass and broth to a large saucepan; bring to a boil. Reduce heat and simmer, covered, for 15 minutes.

3. Strain off lemon grass; add chicken, noodles and chili sauce. Simmer for an additional 15 minutes; add green onions and serve.
