Creamy Mixed Onion Soup
Creamy Mixed Onion Soup
3 tbsp. butter
2 large onions, peeled and chopped
2 large shallots, peeled and sliced
2 leeks (white and pale green parts only), well-rinsed and thinly sliced
3 tbsp. flour
4 cups beef broth
1/4 cup dry sherry
1 tsp. Herbes de Provence
1 cup fat-free or regular half-and-half
Sea salt and freshly ground pepper to taste
Thinly sliced green onions

Prep: 15 minutes, Cook: 45 to 50 minutes, Serves: 4

1. Melt butter in a large pot. Add onions; cook over medium- low heat for 15 minutes, stirring frequently.

2. Add shallots and leeks; cook for 10 minutes more (a little browning is OK). Stir in flour; cook over medium heat for 1 minute.

3. Slowly stir in broth, sherry and herbs. Bring to a boil; reduce heat and simmer for 20 minutes. Stir in half-and- half and simmer until heated through.

4. Season to taste with salt and pepper. Sprinkle each serving with green onions.
