Sweet Potatoes with Apples and Almonds
6 to 8 fresh sweet potatoes or yams peeled and cut into 1/4-inch slices
and cut in to 1/4 -inch slices
2 large green apples peeled, cored and thinly sliced
1/2 box light brown sugar
2 tsp. cinnamon
1/4 cup butter
1/2 cup amaretto (see note)
1/4 cup apple juice
1/2 cup sliced almonds
Preheat oven to 375F. In a large saucepan filled with water, boil potato slices until almost cooked through; drain and cool. Spray a large, shallow casserole dish with nonstick spray. Layer half of the potatoes and half of the apples in the dish. In a small bowl, combine brown sugar and cinnamon. Sprinkle half of this mixture over potatoes and dot with half the butter. Repeat layers. Pour amaretto and apple juice over top. (May be made ahead and refrigerated at this point.) Cover loosely with foil and bake for 45 minutes. Sprinkle almonds over top and bake for an additional 10 minutes or until potatoes are cooked through.

Makes about 12 servings.

Note: Additional apple juice may be substituted for amaretto, if desired.
