Spicy Ginger Cake
Spicy Ginger Cake
1/2 cup butter at room temperature
1/2 cup sugar
1 egg
3/4 cup molasses
1-1/2 cups flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/4 tsp. salt
1/2 cup flat ginger ale
3/4 cup pecans coarsely chopped
1/4 cup crystallized ginger chopped
Ginger Whipped Cream (recipe follows)
Prep time: 20 minutes, Cook time: 35 minutes

Preheat oven to 350F and coat a 9-inch springform pan with nonstick cooking spray; set aside. Cream together butter and sugar until light and fluffy. Add egg and beat for 2 minutes more; stir in molasses. Mix together flour, pumpkin pie spice, baking soda and salt; add to butter mixture alternately with ginger ale. Stir in pecans and ginger. Pour into prepared pan and bake for 35 minutes or until a toothpick inserted into the center comes out clean. Serve cooled with Ginger Whipped Cream: Beat 1/2 cup heavy cream and 2 tbsp. powdered sugar until stiff peaks form. Fold in 1 tbsp. finely chopped crystallized ginger.
