Peanut Pork Tenderloin
Peanut Pork Tenderloin
1 lb. Raley's pork tenderloin
1/2 cup creamy peanut butter
3 tbsp. soy sauce
2 tbsp. honey
1 tbsp. sesame oil
1 tsp. sambal oelek ground fresh chile paste (in our Asian Foods section)
Juice of 1 lime
2 tbsp. peanut oil, divided

Prep: 15 minutes, Marinate: 4 hours to overnight
Cook: 4 to 6 minutes, Serves: 4

1. Cut pork into 1/4-inch thick slices. Whisk together remaining ingredients except peanut oil until well blended. Place pork slices in marinade and turn to coat; cover and refrigerate for 4 hours or overnight. (Discard marinade after use.)

2. Heat half of the peanut oil in a large skillet over medium heat. Add half of the pork to the skillet and cook for 2 to 3 minutes per side or until cooked through. Wipe out skillet and repeat with remaining oil and pork.
