Gluten-Free Irish Soda Bread
Gluten-Free Irish Soda Bread
1 cup brown rice flour
2/3 cup buttermilk
1/2 cup raisins
1/3 cup potato starch
1/3 cup tapioca flour
1/4 cup vegetable oil
1 tbsp. honey or sugar
2 tsp. xanthan gum
2 tsp. whole caraway seeds (optional)
1 tsp. sea salt
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. unflavored gelatin
1 egg, lightly beaten

Prep: 10 minutes, Cook: 50 minutes, Serves: 8

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. Stir together all ingredients in a large bowl; mix well with an electric mixer on low speed.

3. Transfer to a lightly floured board and knead several times; shape into a round loaf and place on baking sheet, flattening slightly. Cut an X in the top with a small sharp knife and bake for 50 minutes or until loaf sounds hollow when tapped.
