Italian Stuffed Turkey Breast
Italian Stuffed Turkey Breast
2 turkey breast halves or 1 whole turkey breast halved
Sea salt and pepper freshly ground
6 cloves garlic minced
1 cup dry Old World Style Potato Rosemary Bread crumbs (from the Fresh Service Bakery)
1/2 cup Parmesan cheese shredded
1 tbsp. rosemary chopped
tbsp. sage chopped
1 tbsp. basil chopped
10 thin slices prosciutto
Prep time: 20 minutes, Cook time: 50 to 60 minutes

Preheat oven to 325F. Place turkey breasts on a cutting board and carefully cut the meat away from the bone with a sharp knife. Place turkey skin side down on a large cutting board and butterfly (see photos). Cover with plastic wrap and pound with a meat mallet until about 1/2-inch thick; season with salt and pepper. Combine garlic, bread crumbs, cheese and herbs in a medium bowl. Spread half of the mixture over the surface of each piece of turkey and lay prosciutto over the top. Roll up, starting with the long end, and tie with string in several places to secure. Place in a large shallow baking dish and bake for 50 to 60 minutes or until internal temperature reaches 165F. Let stand for 5 minutes, then remove string and cut turkey into 1/2-inch thick slices.
