Crisp Rice and Fruit Bites
Crisp Rice and Fruit Bites
1 cup almonds (bulk bin #649)
1 cup walnuts (bulk bin #651)
1 cup prunes
1 cup 1-inch pieces dried mango
1/4 cup Island of the Moon Honey
1 tsp. Simply Organic Vanilla Extract
1 tsp. Simply Organic Cinnamon
1 cups Barbara's Brown Rice Crisps Cereal

Prep: 10 minutes, Cook: 30 minutes, Makes: about 50 squares

1. Preheat oven to 200°F and line a baking sheet with parchment paper or lightly grease. Place almonds in a food processor and pulse on and off to coarsely chop. Add remaining ingredients except cereal and process until ingredients are finely chopped, but not pureed.

2. Place in a large bowl and mix in cereal using your hands. Press firmly into a 3/4-inch thick square on a cutting board, then cut into 1-inch squares.

3. Place on prepared baking sheet and bake for 30 minutes; let cool and store in an airtight container.
